Fall is here and we all know with the season comes baked goods and pumpkin spice EVERYTHING. I literally crave it all once the crisp weather appears. Normally that wouldn’t be a problem, but for the last 6 months I have been clean eating and meal-prepping to slim the waist down and tone up my muscles. Trying to not cave into sweets is a struggle I am not proud.
Not too long ago I saved a post from one of my favorite health and fitness Facebook pages, The Betty Rocker. She shared an article for a 5-Step Food Prep and Recipes Guide For a Lean, Healthy Body and I decided to revisit the article to see if there were some new recipe ideas to try. One recipe stood out from them all— Gluten Free Pumpkin Protein Muffins.
The muffins sounded good and the recipe was easy enough so I decided to give them a try. Luckily for me, my local grocery store had everything the recipe called for which was a huge bonus. Unfortunately I don’t live near a Whole Foods, so sometimes finding certain “unique” ingredients are hard to come by, but this wasn’t the case for these muffins.
I pretty much followed The Betty Rocker’s recipe except I substituted Cloves with a Pumpkin Spice seasoning that I had, to really cure that Pumpkin Spice craving. Let me just say… these muffins are honestly the BEST muffins I have ever had in my life! Not even kidding. They are moist, with the perfect amount of pumpkin and spice. They are guilt-free and practically sugar free which is a huge bonus!
The Pumpkin Spice Protein Muffins are a taste of fall in every bite!
